This One-Pot Chicken Chow Mein is a fast and healthy dinner for the whole family. Juicy chicken, bell peppers, cabbage, peas, and carrots, and it is ready in about 30 minutes.

Ingredients:

  • oil (with a reasonably high smoke point, like vegetable oil or avocado oil)
  • boneless, skinless chicken breasts, chicken thighs, chopped or rotisserie chicken, sautéd along with the veggies
  • red bell pepper
  • snap peas
  • shredded cabbage (or coleslaw mix)
  • carrots (cut into sticks)
  • garlic (freshly minced or powdered)
  • ginger (freshly minced or powdered)
  • red pepper flakes (omit for a milder dish or use cayenne for more heat)
  • chicken broth (instead of water)
  • soy sauce
  • Hoisin sauce
  • a box (375 g) of whole-grain spaghetti pasta, dried ramen, or chow mein noodles

Method

1. Place a skillet on the stovetop, add the chicken, and sauté or stir-fry until the chicken cubes are mostly browned.

2. Add the veggies and cook for a few minutes until softened.

3. Stir the garlic, ginger and pepper flakes into the mixture and cook.

4. Stir in your broth of choice (or water), the soy sauce and the Hoisin sauce.

5. Bring everything to a boil, then add the noodles. Cook until al dente and serve.
